Alan’s Apple Slaw



Ingredients

Salad

2 cups purple cabbage, shredded
2 cups green cabbage, shredded
1 cup fennel, thinly sliced
1 medium sweet onion, diced
1 red apple, cored and julienned
1 Granny Smith apple, cored and julienned
2 carrots, grated
3 green onion, thinly sliced – Garnish on top

Dressing

3 Tbsp. oil
3 Tbsp. honey
3 Tbsp. apple cider vinegar
Juice of 1 lime
Zest of lime
2 Tbsp. fennel fronds
1 Tbsp. celery seeds
Salt and Pepper to taste

Directions

Place oil in a mixing bowl.  Wisk in honey, vinegar and lime juice until blended.  

Wisk in celery seeds, fronds, lime zest, salt and pepper.

Toss cabbage, apples, carrots and onions in a bowl to mix.

Pour dressing over salad and turn to coat.

Garnish with green onions.
