Raspberry Pickled Onions

INGREDIENTS

1 Large Onion (I prefer Purple or Walla Walla)
2/3 cup Apple Cider Vinegar with Raspberry Vinegar added to make ¾ cup
2/3 c water with raspberry syrup added to make ¾ cup
6 Tbs Blue Agave nectar
½ heaping tea fine sea salt
½ heaping tea dill seed

DIRECTIONS
Thinly slice the onion and set to side.  Mix liquid ingredients and place in large jar with lid that will seal tightly.  Add the onion and the salt and dill.  Tighten the lid and shake to mix.  Place in the Icebox (that is a refrigerator for you youngsters) for 24 hours. 
Enjoy as a topping or side with sandwiches, grilled meats or BBQ.
