Alan’s Pickled Green Beans

Ingredients

fresh picked green beans
1 cup distilled white vinegar
1 cup distilled apple cider vinegar
1 cup water
½ cup sugar
1 TBS dill seeds
2 TBS pickling salt
1TBS pickling spice
6 cloves fresh garlic, peeled
sprigs fresh dill weed

Directions

Place garlic cloves and a few sprigs of dill in the bottom of your jar (1 ½ quart size).
In a large saucepan, in gently boiling water, blanch the green beans for 3 to 5 minutes, just until tender. Drain in a colander and rinse with cold water to stop the cooking.  Place the beans in the jar.
In a medium saucepan, bring the water, vinegar, sugar, garlic, dill seeds, and salt to a boil. Reduce the heat and simmer for 2 minutes.
Pour pickling mixture in the jar over the beans, top with a couple more sprigs of dill, put on the lid, and place in the refrigerator to chill for 48 hours.

Enjoy as a side dish or garnish – or like I do as a snack right out of the bottle.
